It's DAY 6 on Induction.  For lunch I had my favorite house salad topped with cheese, tomatoes, artichoke hearts, and bacon with a side of ranch.  For dinner I had a 9oz filet, sauteed mushrooms, and a house salad with tomatoes, cheese, and a side of ranch.  Happy Saturday!  I hope you had a wonderful Low Carb day!

Day 5 of Induction

Happy Friday!!!  It's DAY 5 on Induction.  For lunch, I had the last of the leftover Taco Bake.  For dinner I had a salad with turkey, cheese, bacon, tomatoes, and artichoke hearts with a side of ranch dressing.  After dinner I went to Starbucks and got a low carb drink.  I ordered a tall sugar free vanilla breve latte.  After work I went to an hour of Zumba and now I'm ready to enjoy the weekend! 

Here are some tips for ordering a low carb drink from Starbucks: Order it breve style which means it is made with half and half or heaving whipping cream. To make it almost 0 carbs, I get it made with whole whipping cream. They have a variety of sugar free syrups, which have 0 carbs, 0 sugar. Here is the nutrition info of the sugar free vanilla syrup from CalorieKing: http://bit.ly/1HXQ0y Latte means it is made with steamed milk, so make sure you tell them that you do not want it made skinny style because that means it is made with skim milk. Tell them you want it with all of the fat! They always laugh when I tell them that. Drink and enjoy!

Day 4 of Induction

It's DAY 4 on Induction. For lunch I had leftover Taco Bake.  When I got home from work I made the Pumpkin Bar Recipe minus the Almond Flour.  I'm going to wait to make the recipe once I'm past Induction because I think it would taste much better with the Almond Flour.  For dinner I had a bunless cheeseburger topped with swiss cheese, onions, and mushrooms and a house salad with a side of ranch dressing.

I went to 2 Zumba classes tonight! I seriously can't get enough of it! It's just too much fun! :-) What is your favorite workout?


Pumpkin Bars

1 15 oz can pure pumpkin
1 1/2 cups almond flour
4 eggs
1 tsp cinnamon or pumpkin pie spice
1 tsp baking soda
1 tsp salt
1/2 cup oil ( I used virgin coconut oil)
1 1/2 cup powdered Splenda

Mix the eggs and Splenda until blended well. Add the oil and mix until blended. Add the remaining ingredients and beat until combined.Pour and spread evenly across an 11 X 17 pan.

Bake at 350 for about 20 minutes or until toothpick inserted comes out clean.

Let cool then frost.

Cream Cheese frosting:

1 8oz pkg cream cheese, softened
1/2 cup butter, melted
2 cups powdered Splenda
1 tsp vanilla
1 TBLSP half and half or whipping cream

Day 3 of Induction

It's DAY 3 on Induction. For lunch I had a Greek Salad topped with chicken, feta cheese, tomatoes, and onions with oil/vinegar dressing.  For dinner made a recipe called Taco Bake that Marianne posted on facebook.  I will post it below and under the recipe section under the Forums.  It was so good, it's definitely my favorite Low Carb meal right now.  My husband loved it too!  After work, I went to my favorite workout ZUMBA!  It was a great day!

Here is the Taco Bake Recipe:

TACO BAKE
Crust:
4 ounces cream cheese, softened
3 eggs
1/3 cup heavy cream
1/2 teaspoon Seasoning for Tacos
8 ounces cheddar cheese, shredded, 2 cups

Beat the cream cheese and eggs until smooth. Add the cream and seasoning. Grease a 9 x 13" baking dish; spread the cheese over the bottom. Pour in the egg mixture as evenly as possible. Bake at 375º, 25-30 minutes. Let stand 5 minutes before adding the topping.

Topping:
1 pound ground beef
3 teaspoons Seasoning for Tacos
1/4 cup tomato sauce
4 ounce can chopped green chiles
8 ounces cheddar cheese, shredded, 2 cups

Brown the hamburger; drain the fat. Stir in the seasoning, tomato sauce and chiles. Spread over the crust. Top with the cheese. Reduce the oven to 350º and bake another 20 minutes or so until hot and bubbly. Serve with the toppings of your choice (add additional carbs).

Makes 8-12 servings
Can be frozen

Per 1/12 Recipe: 296 Calories; 24g Fat; 18g Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs

Day 2 of Induction

It's day 2 of following the Induction Phase and it's still going great!  For breakfast I had chorizo and scrambled eggs topped with salsa and ranch dressing.  For lunch I had leftover Just Like Baked Potatoes.  For dinner I had a 9oz filet, house salad topped with cheese, onions, and tomatoes with a side of ranch dressing, and sauteed mushrooms.  For a snack I had deviled eggs. I'm looking forward to what this Induction Phase will bring!

In addition to sharing my meals I'm also going to share any kind of exercise that I do during the week.  Yesterday I went to a kickboxing class which was an awesome after work stress reliever.  Today I went to a class called Recess.  It sounds fun right?!?  It kicked my butt.  LOL!  It reminded me of all of basketball drills I used to do in high school.  What kind of exercise do you do to help aid in your weightloss?


Back to the Basics

I realize if I want to keep losing weight I've got to change what hasn't been working.  This last month I've tried to add in more low carb variety, but I think it has kept me from losing weight.  I haven't lost anymore weight for an entire month and I don't know if it's from the stress of losing my job or because I haven't been following the Induction Phase as closely as I probably should have.  I'm back to the basics and ready to lose!

Today was my first day back on the Induction Phase of Atkins and it went great!  For breakfast I had my favorite mexican meal.  I ate chorizo and scrambled eggs topped with salsa and ranch dressing.  For lunch I had a salad from Jason's Deli topped with turkey, cheese, bacon, and tomatoes with a side of ranch dressing. For dinner I had a bunless cheeseburger with a side of the Just Like Stuffed Baked Potatoes. You can find the JLSB recipe in my forum.

I'm going to be posting what I eat everyday during the Induction Phase for accountability and to give some ideas to anyone that's starting their Low Carb lifestyle.  Please feel free to share what you are eating. I love getting new ideas on what to eat during my Low Carb journey. Remember if you want lifetime results you must make lifestyle changes. You can do it!  I believe in you! :-)

October Changes

I’m so sorry I have been gone from my blog for so long.  This last month of work has been consuming a lot of my time.  October has been a big transitioning month to finish out my job strong and prepare for my next job.  Life is going great, it has just been crazy busy!  I’m so excited to close this door and open up the next door in my life.  Three or Four months ago, my business partner told me that when one door closes another one will open.  It’s so weird how things happen in life.  It’s almost like he was preparing me for what was to come with my job situation.  Change can be tough, but I truly believe that good always comes out of change.  It’s sad to say goodbye to my coworkers and the doctors I call on for my job, but I’m excited to partner with my husband and work with him and pursue my dreams.  Don’t be discouraged when changes happen in life.  It can seem very scary when life is out of control but when you let go and realize you are not in control of your life than things just seem to fall into place at the right time.  Just remember that God wants nothing but for your life to be filled with joy and happiness.  Let go and let God.  I’m so thankful to God for giving me strength to get through this difficult change in my life!  If you are going through a difficult time in your life than I pray that God eases your pain and brings you peace from the inside out.  Thank you for reading my blog and thank you for all of the encouragement you have brought me along my journey to lose weight by eating low carb. 

It's a Marathon, Not a Sprint

Whenever I get discouraged along my weight loss journey, I love finding motivational quotes to help encourage me along the way.  Today I was feeling pretty down.  I’ve been getting frustrated with myself because I feel like I should be losing weight a lot quicker than I am.  Every week is different.  Most weeks I lose about a pound a week.  A week ago I lost 2 lbs which was so exciting, but now I feel like I’m not losing again.  I’ve been following a modified version of the Induction Phase on the Atkins Diet and I think I need to go back to following the true version of the Induction Phase on the Atkins Diet.  One thing I have to remind myself along my weight loss journey is I’m running a marathon, not a sprint.  Losing weight is a process and it takes time.  I’m so ready to be at my goal weight and sometimes I get discouraged when my weight loss slows down.  Do you ever feel like this too?  I'm so happy that I've lost 23 lbs in 3 months and 2 weeks!  I'm halfway to reaching my goal and I know I just have to keep on pushing myself and eventually I will win this marathon.

I'm a Loser!

Whenever I was little one of the worst things someone could call you is a loser.  Who wants to be called a loser?!?  You know what.... I want to be a loser!  I want to be The Biggest Loser!!!  One of my favorite shows to watch is The Biggest Loser.  If you need any encouragement at all to lose weight and you just keep falling short of consistently sticking to any kind of weight loss regimen, than please watch The Biggest Loser.  When you want to lose weight by eating healthy you not only need to do it until you reach your goal, you need to do it for life.  Do you want to lose weight, get to your goal, and gain it all back or do you want to lose weight, get to your goal and stay there?  I know I want to the lose weight for once and for all and enjoy my new healthy body forever.  It's always great to hear other peoples success stories and if you have one than please feel free to share them with me.  I absolutely love success stories!  What's great about The Biggest Loser that's different than any other success story out there is you get to see the whole journey along the way.  You see the excitement, the pain, the challenges, and disappointment.  You get to see the whole journey. 

I know in my own journey there has been a whole mixture of emotions.  Some weeks are awesome and I feel on top of the world because I have lost weight and than other weeks are tough and make me feel down because I don't lose any weight at all.  Some days I'm tempted to eat food that I know I shouldn't and other days I feel so awesome eating all of my low carb food.  Don't get discouraged if you are wanting to lose weight and you just seem to keep falling down.  Losing weight is tough, but know that it is so rewarding in the end!  Find something that encourages you to achieve your weight loss goals.  The Biggest Loser is one thing in my life that completely encourages me to eat right and exercise to lose weight.  Find something that encourages you and start your weight loss journey now!  You can do it!  Please comment below and share what encourages you to reach your weight loss goals?
